The producer traces Nuchima-su to an idea developed by founder Masakatsu Takayasu after Japan’s salt market was liberalized in the late 1990s. He adapted fine-spray equipment originally associated with orchid cultivation into a salt-making process.
The raw material is seawater taken from the Pacific side of Miyagi Island. The company makes the salt at its island factory and sells it through its own shop.
Miyagi Island seawater is sprayed as a fine warm mist so that water evaporates and the remaining marine components crystallize as salt, rather than being concentrated in a conventional boiling pan.
